ok my lovely readers. ready, set, donate!

ok, guys-as many of you know i am participating with other pnw mommy bloggers and marching for babies this year! i am about half way to my goal (i still need to deposit a check) and people, my goal wasn't too high! so this is my last ditch effort to get some awareness happening for the march of dimes.

bellingham with the paper family.

the sun was out and this family jumped at an impromptu trip north to bellingham yesterday. and guess what? the papermama and her adorable paper family were there too! so we decided to play with them.
with temperatures pushing mid 60's we dusted off our shorts and sandals and endured some tulip field traffic for some simple saturday fun of dinner at a bellingham favorite and walking around old fairhaven. there may or may not have been delicious beer involved.
ruari and stella really could have cared less about each others existence but it was still fun to see them toddling around while the adults visited. ruari is so friggen cute-such a little lady!
we had fun eating, drinking, laughing, playing in a toy store, and chasing toddlers-yes TODDLERS!
of course as usual chelsey and i made sure to sneak away for some stepping out photos, you know since i traded the normal weekend yoga pants for some real ones. oh, and there was some garden spawn.

i had to borrow these from chelsey-she got some really great shots while is till fumble over my new camera.

two minutes and three seconds you can never have back.

we are always so blue when rowan heads off to her dad's-but it is hilarious to see stella come out of her shell a little. last night she was being such a crack up...i always think way to late to grab the flip cam and she is worn out and her shenanigans are wearing off.
please excuse tim still in his work clothes and our messy house, we have like five decorating projects going on simultaneously right now.

letting our freak flag fly fair style.

i didn't even realize my seventy-five second roller coaster ride with rowan was going to photographed until we came around the corner and rowan was blowing kisses at tim's camera covered face. eep.
should also stop and mention how stoked my three year old was for this ride; she was like air high five-ing herself about how fun it was going to be the whole wait in line and then using her macho no fear voice while explaining exactly how super fun it was to everyone, cue the tiger 'roars' and everything. <--it was a tiger slash dragon something kid coaster.
in other news. what do you think about this ridic photo of my blonde with dora-pretty much the only reason we went to the spring fair. she better appreciate the hour and a half wait in line so she could hug her hero and walk a way with a giant button of a photo of her and dora. you might have seen a similar display of silliness over at harper's happenings.

sunday-monday: a daily trip to fred meyer. waiting for bed time.
tuesday-wednesday: on my way to an interview, i got the job but couldn't take it because daycare didn't pan out #waybummed. tim brought me bethenny's skinny girl!
thursday: weird sky driving to our pre-marriage counseling, stella bringing me everything from the dryer one thing at a time worn as a scarf, and our new sissy little trees! <--i am IN LOVE with our room lately. i can't wait to get our new bed frame!
friday: little ladies snuggling and watching tangled, we sold our bunk beds and traded for some vintage un-bunked ones!...i am nuts!, and lazy bones settled in to watch harry potter.
saturday: the spring puyallup fair! all pretty much to wait in line for an hour to see dora and for rowan to ride one roller coaster<--seriously the highlight of her life so far!

i got invited to pinterest.com the other day and i have gone mad pinning. i think i had 100 things pinned in the first hour. anyway, i have discovered that it is an ah-mazing wedding planning resource. i have already gotten a ton of comments on the things i am pinning wedding wise and how people are just imagining how cool our wedding will be! so i thought i would share some of my favorite our wedding themed things i have found:

#fivemonthsandcounting

here we are week three; not working out as much but eating a lot better. except that breakdown where a entire bag of easter m&m's may or may not have been consumed. good news in am am down to 141lbs! which remember...we started at 148lbs. woo-hoo!
I am still doing p90x about four times a week but we have amped up our diet thanks to mandy over at harper's happenings-she sent me a magical email that contained directions to a day like this:
breakfast is two egg whites and half a grape fruit.
mid morning snack is 2oz of DELI turkey meat and a banana
lunch is a half to a whole small chicken breast, a cup of rice, and a cup of veggies
after lunch snack is a cup of veggies
dinner is another half to a whole small chicken breast and a clean eating side.


the point is NO dairy, salt, or sugar and to eat every 2-3 hours.


egg whites? i know, so boring...and you can't even use salt. i smother mine in a tablespoon of yummy fresh pico di gallo. i just found a kind that was low sodium.


when it comes to snacking on veggies we hit up costco for big bags/containers of snap peas, strawberries, bananas, cherry tomatoes, and so on.


we are switching between brown rice, jasmine, and plain and using some of our salt free seasonings or smothering it in whatever veggies we are eating.


every other day i am hitting the crock pot with a few pieces of chicken in lots of LOW SODIUM chicken stock and some fresh garlic<--since you can't do salt, cooking it this way gives it TONS of flavor and makes it very moist. we also plan on switching it up by cooking it in lemon and we grabbed some mrs. dash and spike seasonings that contain no salt at all.


some ways i am cheating slightly: last night i shredded my chicken and ate it with romaine lettuce and a very low sodium mandarin orange dressing. also, we are still using our clean eating recipes to change things up from chicken.


of course all of the veggies and proteins are interchangeable but the point as mandy points out is that eating every 2-3 hours kicks your metabolism back into high gear! then cheating every once and awhile is ok.


here is our favorite recipe from last week:
Ingredients:
  • 1/2 – 1 cup Sweet Heat Chili Sauce (recipe here)
  • 1 cup bulgur
  • 2 tbsp extra virgin olive oil (spanish if you have it)
  • 1 medium yellow or white onion
  • 2 cloves garlic, minced
  • 1 can (16 oz) vegetarian refried beans (read the ingredients to be sure they are clean)
  • 1 tsp cumin
  • 3 cups organic corn tortilla chips
  • 3 cups shredded lettuce or greens of your choice
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1 green or orange bell pepper, diced
  • 1/2 cup pitted and sliced black olives
  • 1 cup cheddar cheese, shredded (it’s best to buy a chunk of cheese and shred it yourself to avoid unnecessary ingredients)
  • 1/4 cup yogurt
Preparation:
  1. Cook bulgur according to package directions.
  2. Warm the oil in a large skillet over medium heat. Add the onion and cook about 5 minutes.
  3. Add the garlic and cook about 2 minutes more or until the onion is tender.
  4. Reduce heat to low and stir in the beans, cumin, cooked bulgur and 1/2 cup (or more according to taste, reserving about 2 tablespoons for the dressing) chili saucec 
  5. cook about 5 minutes or until heated through.
  6. Mix yogurt and 2 tablespoons chili sauce for the dressing.
  7. To serve, arrange a layer of 1/4 the tortilla chips on a plate. Top each with a layer of  lettuce, taco filling, tomato, avocado, pepper, olives, cheese and dressing.

monday: yummy new side dish and raspberry beer. what else do you need?
tuesday-wednesday: lounging around, art on the mirror, heading out for playdates.
friday-saturday: playdate at our friends house, ENT appointment, target trip.

don't cha wish your girlfriend was hot like me?

never-mind, but seriously though. do you live in washington? then why the heck aren't you signed up to do bloggers for babies (also known as the march of dimes) with us at the end of the month? 
here is your chance to honor a baby who either passed or survived due to a premature birth experience.
a few of us had a planning meeting (well who i am i kidding, we really talked about how much we love all of you) and there may or may not have been talk of some epic tee shirts and sweat bands. are you sure you don't want to sign up? here is the link you need: washington bloggers for babies.
every day, thousands of babies are born too soon, too small and very often very sick.
our team is walking in the march for babies because we want to do something about this. we would really love for you to join!
the mission of the march of dimes is to improve the health of babies by preventing birth defects, premature births and infant mortality.

#fivemonthsandcounting

sorry a day late but i thought i would check in with my progress. i have lost two pounds since last monday bringing me down to 146lbs. i am not really noticing any huge difference inch wise, but it is early in the game so no worries. big news though: i get my wedding dress friday! i ordered it blind off an online wholesale company saving me TONS of money on the designer dress of my dreams. it was made to my measurements (i have to send them like 50) so i want to be careful not to lose or gain to much to avoid some major alterations. so stay tuned for news on that!
i couldn't bring myself to do any p90x dvd's today-i was tired and grouchy. then to top it off i totally tried to cover up my crappy day with a candy bar. which made me feel more crappy. fail.
we have been having a lot of fun clean eating. of course we haven't been perfect at it with two lower calorie visits to red robin this weekend and road trip junk food when we went on a day trip to camano island.
i finished of week one doing p90x with higher endurance, more flexibility, and the desire to keep going! for this first week i just alternated through the cardio, kempo, plyomentrics, and ab ripper dvd's in no real order. saturday morning tim and i even did one together<--that was fun!
one of my favorite recipes this week was something the f.hubs whipped up. it was so so yummy! you are going to start to learn that we really like fresh lemon in our foods!


INGREDIENTS:

1 pound fresh asparagus
2 tablespoons extra-virgin olive oil
1 large lemon, zest and juice only
Pinch salt
Freshly ground pepper
1 pint red grape tomatoes, cut in half lengthwise

PREPARATION:

In a large pot of lightly salted boiling water, blanch the asparagus until just tender, 1 to 2 minutes for very thin spears, 4 to 5 minutes for thick spears. Drain and place in an ice water bath until completely chilled. Drain well. Cut the asparagus into 1-inch pieces. 

Combine the olive oil, lemon juice and zest, salt and pepper. Toss the asparagus with the oil dressing and the tomatoes and serve.

bacon-y bok choy
